Part 2: The time after Germany’s reunification

Scientific information now published in Ernährungs-Umschau represents the present state of the art; informing its readers about the most recent advances in knowledge, the journal is no longer dependent on congress proceedings. Hopes placed in the reunification and its actual effects on sciences and the nutritional situation in Germany are reflected by publications appearing at the time of reunification and after the change.

Between 1991 and 1999, main subjects were adiposity and its causes, consequences, prevention and therapy; links between diets and degenerative diseases; genetic engineering of food and related fears of potential danger to human health; nutritional behaviour from the socio-economic and -cultural point of view and the chances and limits of taking influence; and, finally, ensuring food hygiene and quality.  This relatively broad spectrum of subjects was dealt with in numerous surveys of the state of knowledge, original papers and in brief information and own contributions of the journal‘s three associations.
