The glycaemic index of different German honeys

The glycaemic index was determined according to the FAO/WHO protocol for 8 different German honeys (DIB products) in 10 persons of normal metabolism and weight and aged 31.5 ± 8.1years. The corresponding insulin kinetics were measured in the same experiment and the glycaemic load (GL) was calculated for 20 g of each honey.

The results show that most of the honeys had much lower GI values than the glucose control. For 6 of the 8 honeys, the GI was 55 or less and this may be regarded as favourable for nutritional physiology. The GL values were correspondingly low. The insulin kinetics are also favourable, with a mean of 55 % relative to the reference glucose. The properties of the honeys may be important for the consumer, as current recommendations on the quality of carbohydrates and their consumption indicate that carbohydrate rich foods with low GI and low GL may have favourable effects on weight changes in overweight subjects and on the development of insulin resistance in individuals with impaired glucose tolerance.
